Champagne Cupcakes
We all know champagne is the iconic beverage for New Year’s Eve, but why limit it to your glass? Let’s enjoy some bubbly in our dessert too! This easy recipe (read: box cake mix) is simple enough to make in a pinch but will delight your party guests!
Ingredients:
1 box vanilla cake mix
4 cups powered sugar
1 cup (2 sticks) softened unsalted butter
1/2 tsp vanilla extract
1/4 tsp salt
Fun decorations like sprinkles!
Directions:
Preheat oven to 350° and line two cupcake pans with cupcake liners. In a large bowl, mix cake mix with 1½ cups champagne. Bake according to package directions and let cool completely before frosting.
*For mini cupcakes, bake for only about 8-9 minutes, this will make a lot of minis!
Meanwhile, make champagne frosting: In a large bowl, combine butter, 2 cups powdered sugar, vanilla, salt, and remaining ¼ cup champagne. Using a hand mixer, beat until smooth. Add the remaining 2 cups powdered sugar and beat until light and fluffy. Transfer to a piping bag fitted with a large star tip.
Pipe frosting onto your cupcakes and decorate! I used a Fancy Sprinkles mix and prism powder on mine - use code “EVENTFULLYCHELSEA15”
HAPPY NEW YEAR!
Hot Cocoa Martini
Ingredients:
1 packet Hot cocoa mix
4 oz Milk
1.5oz Vanilla or whipped cream vodka
.5oz Creme de Cacao
Directions:
Prepare your favorite brand of cocoa mix according to package directions. Let the cocoa cool before adding to a shaker full of ice. Next, mix in your liquors and shake for 30 seconds. Strain into a martini glass (or glass of choice) and garnish with a fancy marshmallow.
This makes one drink, but I recommend making more than one packet of cocoa at a time. This fun wintery drink is very delicious and you’ll want more than one! Cheers!
